MUST HAVES -KITCHEN GADGETS:Β I love to cook over the open campfire flame. The sweet smokey flavor that absorbs into the freshly cooked food is one of my favorite camping experiences. Β I love to create delicious, easy to cook, camping recipes. But let me save you from one of my horrible camping whoopsies….. I forgot the spatula. Ughhhh…. However with a piece of cardboard, tinfoil & a knife, I created my own handy-dandy spatula for our kitchen needs. It did work…. but I am sure if I had a kit with all of my utensils it would have not been forgotten.

My morning is not complete without my hot coffee off the morning fire. These mugs can withstand the heat & keeps my coffee warm.

Some of the metal grills that are over the firepits are sub-par…. & tinfoil doesn’t always do the trick to help cook your food. For a clean, effortless meal, the Camp Griddle is my go too. Trust me, Bacon + tinfoil = mini grease fire & burnt bacon 😦

This is our first year with this Egg Holder & I am beyond stoked in so many ways. In the past, the eggs never seem to stay cool, because we try to place them at the top of the cooler. And then later in our camping adventures, eventually the egg carton becomes soaked from the cooler which turns into a mess. Β Egg Holder- Please do not fail us this summer.

Fish Friday 🐟

Thank Goodness it’s Friday! I’ve been so excited to post this weeks Fish Friday Recipe. Salmon Season is here & I have a Simple & Easy (& Delicious) Recipe for anyone to make for Dinner. 

This Weeks Fish Friday Recipe: Cheesy Onion Crusted Baked Salmon

Prep time:15 mins Cook time:18 mins

Serves: 4-6

Ingredients

2 lb salmon fillet

1 small onion, thinly sliced

salt, ground black pepper

ΒΌ cup mayonnaise

2 Tablespoons lemon juice

Β½ Tablespoon Dijon mustard

2 Teaspoons garlic salt

2 Teaspoons onion powder

ΒΌ cup Parmesan cheese

1/2 cup Mozzarella cheese, shredded

Instructions

Preheat the oven to 400 degrees. Line a baking sheet with aluminum foil.


Place the salmon fillet on the prepared baking sheet. 


Sprinkle with salt, pepper & onion powder.


In a small bowl, combine the mayonnaise, lemon juice, mustard and garlic salt. 


Cover the surface of the salmon with the mayo mixture.


Top with the sliced onions.


Sprinkle with Parmesan cheese.


Evenly coat with shredded mozzarella cheese. 


Bake in the preheated oven for 15-18 minutes, until the cheese is golden brown.


Pair with some green beans & mashed potatoes & dinner is served. AMAZINGLY DELICIOUS.  Fish On! -H

Fall is Here πŸŽπŸ‚πŸƒπŸ

Yesterday turned into an Adventerous Day. Which the chilly weather just made it even better πŸ™‚ 
🍎 Early in the morning, we Apple Picked. I couldn’t believe how red and juicy they were. (& you can’t pick  apples with out trying a few first)

Now, all of the apple possibilities opened up- Apple Crisp, Apple Pie, Apple Cobbler, Oh MY! & I couldn’t wait to get into the kitchen.

But first, we had to go fishing before the rain came through. 

  
Brad (my FiancΓ©) found a four leaf clover before our mini trip, so we tied it to the front of the canoe for good luck. 

  
As soon as his bomber hit the water, he had a fish on. 

  
I think we found our new good luck charm. 

  
I cannot get enough of Fall Fashion. I love the leggings with tall boots, the dark autumn colors and the snug warmth from big sweaters. 

One of my favorite fall pieces are my denim jeans πŸ™‚ From boot cut to skinny to flare, I love them all! Here, I paired my boot cut jeans with my brown boat shoes, a colorful flannel with a puffy green vest. There was a chilly wind, but the vest held up and made it comfortable. I love to play with scarves, they add that little accessory that you need. 

Then we had to leave early due to the rain which was fine,  bc I was thinking about Apple Crisp the whole time 🍎🍎🍎

  

Easy Apple Crisp Recipe- Only 5 Ingredients

Dice approx 5 medium sized apples.

Melt 1/4 cup of butter. 

Mix apple in butter and layer in the bottom of a glass dish.

Sprinkle with Cinnamon.

Mix in a seperate bowl, 1 cup of flour, 1 cup of brown sugar & 1/4 cup butter. 

Later dry mix over apples. 

Bake at 375F for 30 mins. Serve hot & Enjoy!
