Parmesan Crusted Zucchini Sticks

A Delicious & Healthy Treat for anyone to love ❀

It’s simple and takes only a few minutes to prepare. 

Cut Zucchini into 1″ thick sticks & place on a sheet pan. Preheat oven to 350F. 

   Drip Olive oil over Zucchini.

Sprinkle with Thyme, Oregano & Salt.

Drizzle more olive oil and Shake Parmesan cheese over sticks.

Bake for approx 30mins. 

And Voila! Deliciousness! Dip in Ranch and Enjoy.



Homemade Apple Fritter Bread

Homemade Apple Fritter Bread –

Fluffy, buttery, white cake loaf loaded with chunks of apples and layers of brown sugar and cinnamon swirled inside and on top. Simply Irresistible!

Bread Loaf

1/3 cup light brown sugar

1 teaspoon ground cinnamon

2/3 cup white sugar

1/2 cup butter, softened

1 banana

1 1/2 teaspoons vanilla extract

1 1/2 cups all-purpose flour

1 3/4 teaspoons baking powder

1/2 cup milk or almond milk

2 apples, peeled and chopped (any kind), mixed with 2 tablespoons granulated sugar and 1 teaspoon cinnamon

Old-Fashioned Creme Glaze

1/2 cup of powdered sugar

1-3 tablespoons of milk or cream- (depending on thickness of glaze wanted)


Preheat oven to 350 degrees. Use a 9×5-inch loaf pan and spray with non-stick spray or line with foil and spray with non-stick spray to get out easily for slicing.

Mix brown sugar and cinnamon together in a bowl. Set aside.

In another medium-sized bowl, beat white sugar and butter together using an electric mixer until smooth and creamy.

Beat in banana, until blended in; add in vanilla extract.

Combine & whisk flour and baking powder together in another bowl and add into creamed butter mixture and stir until blended.

Mix milk into batter until smooth.

Pour half the batter into the prepared loaf pan; add half the apple mixture, then half the brown sugar/cinnamon mixture.

Lightly pat apple mixture into batter.

Pour the remaining batter over apple layer and top with remaining apple mixture, then the remaining brown sugar/cinnamon mixture.

Lightly pat apples into batter; swirl brown sugar mixture through apples using knife or spoon.

Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, approximately 50-60 minutes.

To make glaze, mix powdered sugar and milk or cream together until well mixed.

Let cool for about 15 minutes before drizzling with glaze.


Homemade Apple Cinnamon Rings


-1 cup of flour-4 large apples 

-2 tbsp sugar + 3/4 cup sugar

-1/4 tsp baking powder

-1/8 tsp cinnamon + 2 tsp cinnamon

-1/4 tsp salt

-1 large egg 

-1/2 cup butter

-1/2 cup milk

-veggie oil

In a large bowl, mix together baking powder, flour, salt, sugar and 1/8 tsp of cinnamon. Set this mixture aside.
In a separate smaller bowl, mix together beaten egg, milk and butter. Set aside.
In another separate bowl, mix together 3/4 cup of sugar with 2 tsp of cinnamon to make the cinnamon sugar topping. Set aside.

Slice apple rings, making sure they are about 1/4 inch thick. Toss out center pieces.

Heat oil in a frying pan on medium heat until oil temperature reaches 350 degrees.

Combine contents of first and second bowls as the oil heats to create your batter.

Dip apple rings first in the batter, piece by piece, scraping off any excess batter by tapping rings against the bowl. Then, fry apples in oil until they brown on both sides.

Transfer crispy, gold apples onto a paper towel-plate. Let cool for about 30 seconds.

Transfer rings individually into the cinnamon sugar mixture and coat evenly.

Place complete apple rings onto a wire rack to cool further, but be sure to serve these while they’re still warm!


Italian Seasoned Honey Mustard Salmon


Seafood: 2 Salmon Fillets

Bread: 3/4c Italian Seasoned Bread Crumbs

Oils: 2tbsp Olive Oil

Spices: 1tsp Black Pepper, 1tsp Salt, 1tbsp Garlic Powder

Condiments: 3/4c Honey Mustard, 1tbsp Lemon Juice


Mix in a bowl, Honey Mustard, Garlic Powder & Lemon Juice

Coat each side of Salmon with mixture. 

In a seperate bowl, mix bread crumbs, salt and pepper. 

Dip salmon in dry mix and coat both sides.

In a glass dish, rub with olive oil and place salmon in dish. Bake at 400F for 15 mins. Serve hot with vegetables and Enjoy! 


Fall is Here πŸŽπŸ‚πŸƒπŸ

Yesterday turned into an Adventerous Day. Which the chilly weather just made it even better πŸ™‚ 
🍎 Early in the morning, we Apple Picked. I couldn’t believe how red and juicy they were. (& you can’t pick  apples with out trying a few first)

Now, all of the apple possibilities opened up- Apple Crisp, Apple Pie, Apple Cobbler, Oh MY! & I couldn’t wait to get into the kitchen.

But first, we had to go fishing before the rain came through. 

Brad (my FiancΓ©) found a four leaf clover before our mini trip, so we tied it to the front of the canoe for good luck. 

As soon as his bomber hit the water, he had a fish on. 

I think we found our new good luck charm. 

I cannot get enough of Fall Fashion. I love the leggings with tall boots, the dark autumn colors and the snug warmth from big sweaters. 

One of my favorite fall pieces are my denim jeans πŸ™‚ From boot cut to skinny to flare, I love them all! Here, I paired my boot cut jeans with my brown boat shoes, a colorful flannel with a puffy green vest. There was a chilly wind, but the vest held up and made it comfortable. I love to play with scarves, they add that little accessory that you need. 

Then we had to leave early due to the rain which was fine,  bc I was thinking about Apple Crisp the whole time 🍎🍎🍎


Easy Apple Crisp Recipe- Only 5 Ingredients

Dice approx 5 medium sized apples.

Melt 1/4 cup of butter. 

Mix apple in butter and layer in the bottom of a glass dish.

Sprinkle with Cinnamon.

Mix in a seperate bowl, 1 cup of flour, 1 cup of brown sugar & 1/4 cup butter. 

Later dry mix over apples. 

Bake at 375F for 30 mins. Serve hot & Enjoy! 

The Great NY State Fair cont’d

Food Galore is an understatement. 

You can have pizza, philly steaks or Fried Dough… But, the oddities are endless for the curious eater: Alligator Bites, Shark, Kangaroo, Ox Tail, Pumpkin Spice Bacon, or Deep-Fried Peanut Butter & Jelly, just to name a few. 

Although the line for the Great Potato is long, it is worth the wait &  it’s only a buck!

This year they added a sweet potato. Yummy. 

  There are agriculture buildings with colored chickens and award winning cows. A zoo with exotic animals like giraffes and zebras. We visited a booth that had flavored goat cheese. 

Herb flavored goat cheese on a cracker.

Fun and excitement throughout the midway. There are a variety of rides and games to play. A wristband for unlimited rides are $25. 

The One Man Band is a sight to see. With his instruments strapped to him from head to his toes, he sings rock music for all of the ages. He is fun and energetic.
Oh my the butterflies! An interactive feeding frenzy with several colorful butterflies.

There is a Giant sand sculpture where artists create a wonderful masterpiece.

There are hundreds of Vendors to purchase merchandise from.
To conclude our adventerous day- a fireworks show πŸ™‚
